The Top Lock Nut and Spring controls the grinding and refining functions of the machine. When it is tightened, the stone wheels are closer to the stone base and through a shearing action, the particle size of the chocolate is broken down. But if the lock is loosened, little or no pressure is applied to the stones and so the machine is on a refining or conching setting. While the particle size of the chocolate will not change, the refining action will impact the organoleptic profile of the chocolate.
