Please note that Model 20 is a Table Top Commercial Refiner.  Model 20’s unique design allows the machine to be easily disassembled for cleaning and maintenance. A universal base allows makers to easily swap out one size bowl for another depending upon production/quantity demands. Optional smaller sized bowls can be purchased to run different batch sizes. Spare bowls can also be purchased to reduce cross-contamination from different ingredients: nuts, milk powders, sweeteners, different bean origins, etc. This flexibility results in less downtime and higher production capacity.

    • Double Stainless Steel deflector blades: This upgrade allows makers to choose all-stainless steel deflector blades providing years of performance. 
    • Pneumatic Pressure System: This device helps to ensure that uniform force is applied between the roller stones and the bottom bed stone during production. As a result,  production is more efficient and more consistent from batch to batch.
    • Rapid Refiner: This upgrade helps makers control the temperature and aeration of the chocolate during the entire process thus reducing refining and conching time by as much as 30%.     The Rapid Refiner

    The Rapid Refiner: heats the drum and stones before making chocolate, so the ingredients are more quickly and efficiently incorporated. uses warmth and air flow for flavor development in DCM Premium Commercial Refiners. The Rapid Refiner easily fits over the Premium Commercial Refiner and warms the bowl and stones within minutes. The hinged design allows ingredients to be added while the Rapid Refiner is in use. Easy control panel allows temperature to be adjusted according to chocolate maker preferences. Temperature controls help when refining low viscosity chocolate recipes, such as chocolate made without additional cocoa butter. Made in the USA.
