Lavender Lemon Cake Squares

It's lavender season! Enjoy the beautiful sunshine and weather with our lavender lemon cake squares! We've combined our Lavender Tea with fresh lemons and plums into a lovely cake topped with decadent drizzle. Bring these lavender lemon cake squares for a little dessert at work or your next dinner party! They're the perfect balance of fruity and nutty.

Ingredients: 

Cake

  • 1 mug of brewed indi chocolate Lavender Tea
  • 1/2 cup butter
  • 3 tablespoons sugar
  • 4 eggs
  • 1 1/2 cups almond meal
  • 1/4 cup yogurt
  • 1 Tablespoon chia seeds
  • 2 Tablespoons lemon juice
  • 1 Tablespoon lemon zest
  • 2 peeled, cored, and cut plums
  • pinch of salt
  • sliced almonds
Drizzle
  • 3 Tablespoons lemon juice
  • 2 Tablespoons powdered sugar

Directions:
Cake
  1. Preheat oven to 350 F
  2. Mix butter and sugar until soft and fluff
  3. Add eggs and almond meal - mix well
  4. Fold in brewed and sieved indi chocolate Lavender Tea, yogurt, chia seeds, lemon juice, lemon zest, plum, and salt; mix well
  5. Pour into greased baking dish, sprinkle almonds on top
  6. Bake for 30 minutes
  7. Let cake cool for 10 minutes
  8. Poke holes into cake with a fork to allow drizzle to seep through cake
Drizzle
  1. Stir powdered sugar with lemon juice
  2. Sprinkle drizzle on top of cake
  3. Let cake and drizzle cool completely
  4. Cut into squares and enjoy!
