Mushroom Arugula Quiche with indi chocolate Pacific Spice Rub


  • 1 pie crust 
  • 1 cup arugula (Pike Place Market is a Farmer's Market, so pick up this arugula from one of your favorite farmers in the Market)
  • 1 cup shiitake mushrooms (nothing says Fall like Mushrooms in Pike Place Market)
  • 1/2 cup goat cheese (pick some up from the Creamery in Pike Place Market along with your butter, half and half, and eggs)
  • salt and pepper
  • 2 tbs butter
  • 1/2 cup half and half
  • 2 tablespoons indi chocolate Savory Pacific Spice Rub (available in store or online)
  • 6 eggs


  1. Preheat oven to 350 degrees
  2. Saute mushrooms in a pan
  3. Press crust into a pan and add mushrooms and arugula 
  4. Beat eggs, cream, indi chocolate Savory Pacific Spice Rub, salt and pepper and add to the pan
  5. Sprinkle goats cheese on the top 
  6. Bake for 40 to 50 min
