Grain Free Granola

Kick off your New Year's Resolution for healthy eating with our Grain Free Granola! Munch on the fresh nuts and dried fruits with this delicious granola. Add in some indi chocolate Cacao Nibs for extra health benefits! Cacao nibs are a great source of antioxidants and can help improve your heart health. Top your yogurt in the morning with this granola or take it with you for a snack! 

Ingredients: 

  • 1 cup raw cashews
  • 1 cup raw walnuts
  • 1 cup dried currants 
  • 1 cup slivered almonds 
  • 1 cup unsweetened coconut flakes
  • 1/2 cup pumpkin seeds/pepitas
  • 1/2 cup sunflower seeds
  • 1/2 cup indi chocolate Cacao Nibs
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 2/4 cup coconut oil, melted
  • 4 medium bananas, ripened and mashed
  • 1/4 cup sesame seeds 
  • 2 teaspoons vanilla extract

Directions:

  1. Start by preheating your oven to 350°F. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the nuts, currants, coconut flakes, seeds, coconut, indi chocolate Cacao Nibs, nutmeg, and cinnamon. Pour mixture onto lined baking sheet.
  3. In a medium sized mixing bowl mash the bananas with a fork. Stir in the melted coconut.
  4. Pour the banana-oil mixture over the granola and stir it all together making sure that every bit is coated
  5. Spread the granola out on the lined baking tray so it is evenly distributed and bake in the oven for 30-35 minutes. About halfway through, remove the pan to gently stir the granola so that it cooks evenly. Once it reaches a golden brown color, remove and cool before serving.
  6. Enjoy!
