Green Mini Frittatas with Jamaican Jerk Spice Rub

Eat green with these adorable mini frittatas. These little guys are chalk full of green veggies and seasoned with our flavorful Jamaican Jerk Spice Rub! This recipe is sure to make others green with envy over how delicious they are.
  • 2 mini zucchini
  • 1 cup broccoli
  • 2 green onion
  • 1/2 cup chives
  • 1 green jalapeño
  • 1/2 green pepper belly
  • 1/2 avocado
  • 5 eggs
  • 2 cups spinach
  • 1/2 cup Parmesan
  • 1-2 teaspoons indi chocolate Jamaican Jerk Spice Rub
  • pepper, salt
  • edamame


  1. Preheat oven to 360°F
  2. Place spinach, avocado and eggs into bowl and mix it well with a blender
  3. Cut zucchinis, broccoli, green onions, chives, jalapeño and pepper belly
  4. Add veggies to spinach-eggs mix and combine it with a spoon
  5. Add indi chocolate Jamaican Jerk Spice Rub, salt and pepper and mix it with a spoon
  6. Grease your muffin molds and fill with the mix
  7. Sprinkle on Parmesan
  8. Add some edamame
  9. Bake for 15 - 20 minutes
  10. Enjoy with a spicy sauce and radish!
