Roasted Molé Delicata Squash Salad with Warm Tangerine Dressing

Ingredients for Salad:

  • 2 large handfuls of fresh Arugula
  • 1 delicata squash cut and seeded
  • 1/2 cup pomegranate seeds
  • 1/4 cup toasted pumpkin seed
  • 1 soft boiled egg halved
  • 2 tbs coconut oil
  • Salt and pepper
  • 1/2 cup crumbled goat cheese
  • 2 tbs indi chocolate Molé Spice Rub

Ingredients for Warm Tangerine Dressing:

  • Juice of one tangerine
  • 1/4 cup olive oil
  • 3 tbs apple cider vinegar
  • Salt and pepper
  • 2 tbs maple syrup

Directions for Warm Tangerine Dressing:

  1. Combine ingredients in a sauce pan and whisk until warm

Directions for Salad:

  1. Preheat the oven to 400 degrees
  2. Coat squash in olive oil, salt and pepper and indi chocolate Molé Spice Rub
  3. Bake for 30 min or until squash is soft
  4. Toss arugula with part of the dressing, toasted pumpkin seeds,  pomegranate, goat cheese 
  5. Add Molé squash and soft boiled egg on top and coat with a little more dressing to serve.
  6. Enjoy!
