Roasted Molé Delicata Squash Salad with Warm Tangerine Dressing
Ingredients for Salad:
- 2 large handfuls of fresh Arugula
- 1 delicata squash cut and seeded
- 1/2 cup pomegranate seeds
- 1/4 cup toasted pumpkin seed
- 1 soft boiled egg halved
- 2 tbs coconut oil
- Salt and pepper
- 1/2 cup crumbled goat cheese
- 2 tbs indi chocolate Molé Spice Rub
Ingredients for Warm Tangerine Dressing:
- Juice of one tangerine
- 1/4 cup olive oil
- 3 tbs apple cider vinegar
- Salt and pepper
- 2 tbs maple syrup
Directions for Warm Tangerine Dressing:
- Combine ingredients in a sauce pan and whisk until warm
Directions for Salad:
- Preheat the oven to 400 degrees
- Coat squash in olive oil, salt and pepper and indi chocolate Molé Spice Rub
- Bake for 30 min or until squash is soft
- Toss arugula with part of the dressing, toasted pumpkin seeds, pomegranate, goat cheese
- Add Molé squash and soft boiled egg on top and coat with a little more dressing to serve.
