Bourbon Bread Pudding

Fear no more and reduce your waste by using it to make Bourbon Bread Pudding with cacao nibs. Soak the nibs in that bourbon you've been saving all year for a yummy dessert that's sure to keep your soul warm.

Ingredients:

Bread Pudding

  • 4 eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 tsp. vanilla extract
  • 1 pinch salt
  • 1/2 loaf of leftover bread (we love Sea Wolf bread) 
  • 4 Tbsp. bourbon
  • 3/4 cup cacao nibs (soaked in said bourbon)

Bourbon Caramel Sauce

  • 1/4 cup unsalted butter
  • 1/2 cup sugar
  • 3 Tbsp. heavy cream
  • 2 Tbsp. bourbon
  • 1/2 tsp. cinnamon
  • 1 pinch salt

Directions:

Bread Pudding

  1. Combine the cacao nibs, bourbon, and vanilla. Allow to soak for 1-2 hours (more if you are forward thinking).
  2. Grease 9x13 baking dish. Another option is using smaller, individual ramekins, making for beautiful single serving muffin-like puddings.
  3. Mix eggs, whole milk, heavy cream, sugar, extract, and salt in bowl.
  4. Cut bread into 1/2 inch squares and place in baking dish.
  5. Pour egg mixture over the top and let stand for 5 minutes.
  6. Submerge bread and refrigerate until one hour before you're ready to cook.
  7. Combine nib and bourbon mixture into bread mixture.
  8. Preheat oven to 375°F.
  9. Bake until bread pudding has puffed up and is golden brown, approximately 50 minutes.
  10. Remove and place on cooling rack. Begin to make Bourbon Caramel Sauce
Bourbon Caramel Sauce
  1. Mix sugar, cinnamon, and salt together in small bowl.
  2. Melt butter in saucepan over medium-low heat.
  3. Add sugar mixture, cream, and bourbon to saucepan, stirring continually.
  4. Cook, stirring often, until thickened, about 5-8 minutes.
  5. Pour sauce over bread pudding and let cool for 5-10 minutes.
  6. Serve and enjoy!
